There is a very short list of people in Houston I have known more than three years! A list short enough I can count on one hand. Beth is one of those people, in fact I have known her since I was three. It is no surprise when Beth had her first baby, I was eager to find an excuse to stop by for a visit. What better to bring a new Mommy then, food of course! For those of you who think you don’t like quiche, you have never had a good quiche. Images of wet egg filling your mind….. Yeah that’s a bad quiche. This recipe is foolproof, my mom and I have been making it for as far back as I can remember.
1 cup of Swiss Cheese (I prefer Gruyere Swiss)
4 slices of bacon
1 cup of Heavy cream
1 store bought pie crust (I use Pillsbury from the cooler section)
Directions: Preheat the oven at 375 Fry up the bacon
While the bacon if frying shred the cheese (Tip: for the more budget friendly version of this recipe you can shred sliced Swiss cheese)
Once the bacon is cooled, crumble it. Toss the cheese and bacon in a couple teaspoons of flour, this will help to make sure the fillings don’t fall to the bottom of the quiche. You can add other ingredients just make sure they are all dry before they go into the quiche.
Roll the pie dough into a 8 inch tart pan, then pour the cheese/bacon combo onto the crust. Whisk the heavy cream and eggs together until well combined. Pour the egg mixture on top on the fillings and pop I the oven for 35-45 minutes until golden brown on top. Now you have a perfect quiche
And the perfect way to be welcomed with open arms into any friends home
Beth and little Carter who was even more precious in person then any picture could capture. Enjoy this quiche with family and friends that might as well be family. Happy Friday from my home to yours!
