Pumpkin…. What else could you ask for to make ever the hottest part of the country feel like Fall? Without the weather changes this is how you know Fall must be here, pumpkin lattes, pumpkin cupcakes, pumpkin pasta, the list goes on…… I absolutely love it all, I am a self proclaimed pumpkin junkie so this is prime time for this foodie…. I am sharing with you the best possible pumpkin bread recipe you will try all fall… Pumpkin Bread (This recipe makes two loafs) 1 15 oz can of pumpkin purée 4 eggs 1 cup of coconut oil 2/3 cup of water 3 cups of white sugar 3.5 cups all purpose flour 2 tsp baking soda 1 tsp salt 1 tsp cinnamon 1/2 tsp cloves 1 tsp ginger 3 tsps light brown sugar 3 tsps dark brown sugar Preheat your oven at 350, then combine all wet ingredients with the sugar and mix. The coconut oil really does add a uniqueness to the flavor but not enough that even the biggest coconut haters (my husband) will be able to detect it. You can swap it for canola but I love my sprouts coconut oil and all of its “better fats”. It makes me feel like the bread is just a bit healthier
I then combine the dry ingredients mixing with a whisk to get out lumps (I have no patience for sifting but sift if you must). There is no need for fancy spices though, I’m a big fan of the store brands
Now time to make the magic and combine the wet and dry ingredients. Then pour into two 7 by 3 inch loaf pans, greased of course (I use spray coconut oil to make it a little easier). Then sprinkle half of each type of brown sugar on top of each batter filled pan. This will add a crunch and warm vanilla hint to the top of the bread, plus it makes the bread look irresistible when it comes out of the oven.
Pop it in the oven and roughly 50 minutes later (when your toothpick comes out clean)….
