Pumpkin spiced latte, pumpkin cornbread, pumpkin macarons, pumpkin yogurt…… I want pumpkin everything right now! Tis the season I suppose, I love pumpkin flavored everything especially this time of the year. Every year there is a particular pumpkin item I want more than any other… This year I have wanted a pumpkin cupcake like none other, and this recipe is on point!
The Perfect Pumpkin Cupcake
1 box Spice Cake Mix (Not mixed)
1 (3.4 ounce) package instant french vanilla pudding mix
1/2 cup sour cream
1 cup pumpkin puree
1/2 cup vegetable oil
3 eggs, beaten
2 tsps. pure vanilla
1 (8 ounce) package of cream cheese, softened
1/4 cup unsalted butter, softened
3/4 of a pound of confectioners’ sugar
1 tsp. pure vanilla
Preheat the oven to 350 degrees F, line muffin tin with cupcake liners. Beat together cake, pudding mix, sour cream, oil, pumpkin, eggs, and vanilla. Beat this mix until well combined. Using a large cookie scoop distribute the batter between 14-16 muffin tins. Bake in oven for 18-22 minutes, allow cupcakes to cool.
Beat cream cheese until smooth, then add in butter and beat for about 3 more minutes. Turn mixer on low and slowly add confectioners sugar until well combined. Add in vanilla and beat until smooth. Ice cupcakes and decorate as desired (I topped mine with a small dollop of apple butter). Yumm!
