Honey Glazed Carrots
Servings: 4 (as a side)
12 Medium size carrots (I used heirloom for all the pretty colors but any carrots will be fine)
2 tbsp Olive Oil
3-4 Sprigs of rosemary
2 tbsp Honey
First peel and chop the carrots into 1/2 inch slices. Next heat the olive oil in a saute pan, once its heated add the rosemary sprigs. Fry the rosemary for 2-3 minutes until lightly browned and then add the carrots. Let the carrots cook for 7-10 minutes until the carrots are seared and they are slightly tender. Next add honey to the carrots and cook 10-13 minutes longer, stirring every few minutes to candy evenly.
I know this sounds simple but the flavor is incredibly complex. Even my husband was asking how I made these, they were a hit! Simple, yummy, and healthy.. Its doesn’t get better than that.
