Hello Lovely! Are you stuck trying to make a game day spread that isn’t messy, looks good, and tastes even better? I get stuck every time the husband has a guys night. I’m an event planner, I’m never going to be the wife that just throws out some bags of chips. Place set chips in a fun (plastic) bowl, sure.
Believe it or not guys night or game days are some of my most difficult to plan. James doesn’t want me to plan anything fussy and I feel there is an unsaid expectation of anyone coming to my home. But he loved these and I’m sure they will be perfect for just these types of occasions.
Chili cups are manly, full of protein, look great, and they are a finger food! There isn’t much of a recipe for these but these are instructions for building….
1 Batch of your favorite chili (here’s one of mine)
2 Boxes mix of cornbread prepared in muffin tin (No need to make this from scratch but help yourself)
Shredded sharp cheddar
Take each of the muffins and scoop out the middle with a spoon (WARNING! Do not carve your mini cornbread bowl out too thin or the chili will bleed through). Fill the mini bowls with chili and top with cheese if you choose. I set my oven boiler on high and throw the cups in the oven just long enough to melt the cheese. Last if you are an everything bagel type of person, throw a dollop of sour cream and a single jalepeno on top. Serve immediately!
As most event planner know, we love a good short cut. We love a way to look like we have it all together (i.e. cornbread mix). You can make these as easy on your selves as you’d like (buy the chili ready made and the muffins if need be), presentation is really the key to this.
