Hello Lovely! James is my lobster and when I saw the lobster gummies at Trader Joes I knew exactly what I had to do for our stay at home Valentine’s day…
In case your missing the lobster reference you have to watch this video. Lobsters mate for life and I can think of no better way to tell James how much I love him then the ultimate chocolate cake with a few lobsters on top.
Ultimate Chocolate Cake
3/4 Cup + 3 Tbsps. Unsweetened cocoa
1.5 Cups Boiling water
3 Large eggs
1.5 Tsps. Vanilla
3 Cups Cake flour
2 Cups Light brown sugar
2.25 Tsps. Baking powder
3/4 Tsps. Baking soda
3/4 Tsps. Salt
1 Cup Unsalted butter (softened)
1 Batch of chocolate buttercream icing (recipe below)
Optional: Sprinkles and Swedish gummys (Trader Joe’s) for decorating
Preheat the oven to 350 degrees. Prepare (2) 9 inch cake pans. In a medium bowl whisk together cocoa and boiling water until smooth. Cool to room temperature. In another bowl lightly combine the eggs, 1/4 of the cocoa mixture, and vanilla.
In a large bowl combine the remaining dry ingredients and mix on low speed for 30 seconds. Add the butter and remaining cocoa mixture. Mix on low speed until the dry ingredients are moistened. Increase to medium speed (high speed if using a hand mixer) and beat for 1.5 minutes. Scrape down the sides. Gradually add the egg mixture in 3 batches, beating for 20 seconds after each addition to incorporate the ingredients and strengthen the structure. Scrape down the sides.
Pour the batter into the prepared pans, the pans should be about 1/2 full. Bake 20-30 minutes or until the toothpick comes out clean. Cool in the pans for at least ten minutes and then the rest of the way on a cooling rack.
Milk Chocolate Buttercream
1 Pound milk chocolate
8 Ounces dark chocolate
1.5 Cups softened butter
Melt the chocolate in a double boiler over hot water, while making sure the water does not touch the bottom of the double boiler. Once chocolate is melted smooth set aside until cooled through. Beat the butter in a mixer until fluffy and add the chocolate. Beat this mixture until completely combined and then ice the cake!
Last decorate the cake as you see fit!
