Hello Lovely! First, I’m so sorry I’ve been MIA lately. Over the past couple of weeks James has finally finished up with school and been seriously on the job hunt. While he has been on the job hunt, I’ve clearly been a bit on hold. Luckily, as we were getting ready to head to Arkansas for my baby brother’s high school graduation, my mom called with an excellent proposal. Being James’ graduation weekend as well, I had put in for a week of vacation the next week. I figured I could use a week off to get settled and adjusted with all the changes at home with James finishing up and transitioning back into the workforce.
Back to mom’s proposal, she called to ask if we wanted to tag along on my brother’s senior trip to 30A. Needless to say we said yes!!! Since we are still waiting to hear back from some interviews James has already had, it was the perfect break we both needed. Although he may have spent a good chunk of the trip on the wifi in the condo following up on jobs, I spent my time reading a mystery novel beachside. We had hoped we’d hear something while we were there and planned to rush back for him to sign papers. No luck on that note so prayers would still be very much appreciated!
On a final more fun note, I got the greatest new cookbook, Cocktails, Cordials, Infusions, Syrups and more. I knew I had to share a recipe out of it with you immediately. Since my sweet hubby is spending the week going between job hunting and helping around the house, we went with his pick. Apple Lemonade it is this week!
Makes 2 Cups
2-3 Cooking apples, unpeeled, chopped into small pieces
Sugar, to taste
Freshly squeezed juice of 1 lemon
Sparkling mineral water, to top it off (I used lime flavored)
Ice Cubes, to serve (optional)
Directions: Put the apples in a saucepan, cover with cold water, bring to the boil and simmer until soft. Strain the apples, pressing the pulp through a fine sieve with a spoon. Add sugar to taste, stir until dissolved, then leave to cool. To serve, pack a pitcher with ice, half-fill a glass with the apple juice, add the lemon juice, and top off with the sparkling water.
