Hello Lovely! I’m going to skip the cute story or the mini life update tonight. Today’s recipe is too good for me not to get to it immediately and trust me you need these in your life ASAP!
Halloween Faux Oreos
Ingredients for Cookies:
1 1/4 Cups All Purpose Flour
1/2 Cup Cocoa Powder
1 1/2 Cups Granulated Sugar
1 tsp Baking Soda
1/4 tsp Baking Powder
1/4 tsp Salt
1/2 Cup plus 2 tbsp Unsalted Butter (Room Temperature)
2 Large Eggs
2 Teaspoons Kosher Salt or Black Sparkle Sprinkles
Ingredients for Orange Frosting:
1/4 Cup Unsalted Butter (Room Temperature)
1/4 Cup Vegetable Shortening
2 Cups Sifted Confectioners’ Sugar
2 tsp Vanilla Extract
1/4 tsp Orange Gel Food Coloring
Preheat the oven to 375’F. Line a baking sheet with parchment or a slip mat. Mix all dry cookie ingredients in mixer on low, add butter and eggs into mixture. Scoop tablespoon size balls of dough and put them at least 2 inches apart on the baking sheet. Sprinkle the salt on the dough balls and bake until they just begin to crack (roughly 5.5 minutes). Let them cool on the cookie sheet. DO NOT overcook, the cookies will really harden when cooled. As for the filling blend butter and shortening while slowly adding in confectioners sugar. Once all is blended add in the vanilla and food coloring. Put icing on the bottom of half the cookies and top with the remaining cookies.
Enjoy these with friends or risk eating them all as soon as your finished… I speak from experience, these are too good to resist.
Happy Halloween Month ;)!
